Located right where the Kiso River meets the Ise Bay in the Aichi prefecture, Yamachu Honke is a small brewery with a renowned reputation across Japan. They are known for their high quality sake a history of sake-making dating back to 1813. Their signature Gikyo brand which can be translated to “chivalrous” and “generous”.

The name is profoundly apt for the brand when they refused to raise the price of sake in the 19th century, even when the price of rice was on the rise. They believed that as sake makers, they had a sense of duty and obligation to their customers.

Yamada Nishiki rice is considered one of the most elegant and expressive rice used for making premium sake. Only a few sake exemplifies elegant sake-making as well as Gikyo and Yamachu Honke, being one of 12 breweries who have access to Grade A Yamada Nishiki rice grown in the Tojo area of Hyogo.
The secret to their popularity may lie in the work made possible by their small production volume. The belief of ”Yamachu Honke Shuzo” is that their job is not to tamper with the rice, but to bring out the best of the ingredient to express its innate power. They polish the rice themselves, carefully observing the conditions of rice each year.The rice is then washed by hand, and soaked in water under strict control
Yamachu Honke Shuzo is located 40 minutes away from Nagoya train station, accessible to Nagoya city many tourists will set eyes on doing sightseeing in Nagoya Castle, Hitsumabushi. Popular among locals, is “Tsushima Shrine” and Tatsuda City both renowned for producing a special type of lotus root.

Tasting Note

This sake is made from Grade A Yamada Nishiki rice. With the polishing at 50%, it allows drinkers to savour the full potential of YamadaNishiki rice. It possesses notes of melon with cereal grains and toasted wheat. The drinker will also be able to taste hints of spice with a dry finish.
