Brewed in Kochi prefecture in the Shikoku region, this product stands out from the crowd with its special “Yamadanishiki sake rice” used in the production of Suigei sake. The rice is milled and brewed at very low temperatures. This modern brewery which name can be translated to mean “drunken whale” was originally based in Kochi city and expanded to the west of Kochi opening a brewery in Tosa City.

The freshness of the sake Suigei is due to the fact that it trucks in its water from the upper reaches of the Kagami River around Mt. Tosa which is free from iron, manganese and other minerals perfect for the sake brewing process.

Suigei was made in Kochi Prefecture, a place surrounded by rich nature where a large pacific ocean sits spreading to the south of Kochi. With an average temperature of 17.7 degrees, the weather in Kochi is perfect for sake brewing.
Tosa-kura based in Kochi is one of the newest additions to Suigei’s prefecture. Sitting at one of the hottest spots for sightseeing, Tosa-kura is integrated with the latest sake production system from rice polishing to bottling sake.
Water sourced from the Kagami river and brewing method using traditional yeast and special raw rice, the brewery and brewers are meticulous in every step of the brewing process from rice polishing, rice washing to radiation cooling.

Tasting Note

This semi-dry Junmai Daiginjo is an improvement from classic casual Suigei sake. It uses Hiroshima prefecture special Hattannishiki rice that is polished down to 40%. This perfectly balanced sake with acidity and umami at its finest to allow it to pair with white fishlike hirame, red snapper.

Tasting Note

Brewed using the Kochi prefecture's original rice, Gin-no Yume, this special saké has an umami-rich taste. The savory tones are enhanced by slightly citrusy flavors that yield a clean, refreshing finish. It is best paired with greasy fried seafood that is prepared in Asian or Western way.
